This time I’ve added a cream cheese layer along with juicy red strawberries and plump, ripe blueberries for the ultimate summertime dessert. I’ve made my gluten-free version a number of times since then, always to the same end! The house smelled amazing and it disappeared so fast, I can’t even tell you. Sprinkle with remaining Demerara sugar and a sprinkling of cinnamon.īake for 50 minutes to an hour. Top the cake with the crumb topping and scatter with the remaining blueberries. Top with the remaining batter, gently spreading over the fruit so as not to dislodge it and levelling. Scatter with blueberries and a little Demerara sugar. Spread half the cake batter in a lined square 9 inch cake tin. Make sure to scrape the bottom and sides of the bowl with a spatula halfway through. Start mixing on low speed then increase speed to maximum and beat well until the batter is smooth. Add the softened butter, eggs, sourdough starter, milk and vanilla extract. Stir together to mix the dry ingredients. Put the flour, sugar, baking powder, baking soda, cinnamon and salt in a large mixing bowl. Squish some of the crumbs together to make bigger clumps of the topping. Use your fingers to rub together until the mixture looks like crumbs. Put the flour, sugar, butter, cinnamon and salt in a small bowl. Make sure the ingredients are at room temperature. You can use a hand mixer or a stand mixer to make the batter.
